Knockoff Burritos

I found this recipe in the Star Tribune Taste section while I was pregnant with Caleb. This makes A LOT of burritos and the meat is so yummy!

This is how the recipe appeared:
Um Ya Ya Burritos
Makes 15 to 20 servings

Note: Cost/ serving for 15 burritos with pulled pork, tortilla, and spices, about 80 cents/ burrito. These are very spicy, so adjust seasonings if you prefer.

2 tbsp. cumin
2 tbsp dried oregano
2 tbsp garlic salt
2 tbsp black pepper
4 lbs pork shoulder roast (also called a butt roast)
Black beans, soaked and cooked or from a can and warmed (whatever amt. you prefer)
Cooked Rice (whatever amt you prefer)
salsa, optional
15 flour tortillas

Combine the cumin, oregano, garlic salt, and pepper. Rub the spices into the pork roast, place in a large bowl and refrigerate overnight, turning once.
Place the roast in a slow cooker and cook for 6 to 8 hours, or until the meat shreds easily
Divide into individual portions, add rice and beans, and salsa, if desired, and wrap in a flour tortilla.

Nutritional Information per serving with 1/4 C black beans, and 1/4 C rice:

Calories - 426
Fat - 14g
Dietary Fiber - 5g

Now if you break it down like I did below, the burritos become a more manageable 6 pts.

2 oz Pork Shoulder Roast - 2 pts
1/4 C white or brown rice - 1 pts
1/4 C Fat free black beans - 1 pt
Tortilla - 2 pts
